Come on Barb, learn your vegetables!!

My body finally told me today that I had to ditch the current diet of Super noodles, Dairy Milk and Shiraz. This was, of course, conveniently in the middle of baddha Utthita Parsvokonasana (bound side angle for all those non sanskrit readers amongst you!) where my sweaty hands clinging to each other for dear life were wrenched apart as I gasped for breath and willed myself not to vom all over the uber clean and swanky yoga studio floor! I think every bit of crap that I had eaten over the last week had saved itself for this very moment to unleash all its super badness on me, and let me tell you, it was not pretty! I am normally very conscious of what I put in my body but this has been a tough week, emotions have been running very high and all my body kept telling me was "Eat sugar Sophie, eat lots of sugar!"
So, game face on, I went straight from yoga to the supermarket and filled my basket with all the fresh stuff I could get my clammy hands on. I bought coriander and onions and sweet potatoes and cucumber and tomatoes and peaches and bananas...you get the picture.  Just as an aside, although the people in my local "Publix" are generally very friendly and courteous, they are, and I say this with every ounce of compassion in my body, thick as shit! The lady who served me, Barb, (say no more!) held up the swede and asked me "What's this?"! It's a bloody swede Barb you simpleton!. I only thought this, loudly, in my head! What I said was "Rutabaga!" Which, is what they call a swede here. Do not even ask, I have no idea! She tapped that code in and then proceeded to fling the very delicate and perfectly ripe peaches down the slopey aisle thing so that they crashed into the bloody rutabaga, the loaf of wholewheat bread and a bunch of flowers crushing and bruising everything! Bloody Hell Barb! 
I digress!
So I came home armed with good food and a positive attitude, and made SOUP. Not just any soup. The most beautiful, creamy, flavour-filled soup ever. 
And because I am such a lovely blogger, I am sharing the recipe with you. Actually it's not really my recipe to share but it is bloody gorgeous so here goes...

Sweet Potato, Coconut & Chili Soup


Good healthy stuff!
First, gather your ingredients...  





1 large onion, finely chopped
couple of cloves of garlic, crushed
2 large sweet potatoes, diced
1 bunch fresh coriander, chopped
1 fresh red chilli, finely chopped
1 tin coconut milk
2 heaped teaspoons cumin
1 chicken stock cube
4 spring onions

Next...


Adding in the next magical ingredients
Fry the onions gently with the crushed garlic in a little olive oil until soft then add the sweet potato. Let the mixture cook down so the sweet potato softens and goes a bit mushy - about 30 mins. You may need to add a little water if it starts to stick to the pan. Then add half the coriander, the chilli pepper and the coconut milk. crumble in the stock cube, add the cumin and a little water and let it simmer for another 20 mins or so. Again you may need to add more water here, depending on how thick you want the soup to be. 

Into the blender now!


Then take the whole mixture and blend it. Add in the rest of the coriander and the spring onions, and season with salt and pepper.




Finally...


Put it into some gorgeous bowls with a bit of garnish and a hunk of crusty bread on the side and experience heaven!
DELICIOUS!

  1. Fee don't you think this would work just as well with a hunk of Dairy Milk on the side or even just a hunk on the side!? Hope your insides appreciate all the effort you've been to.

  2. Sounds yummy, except that I am not a huge fan of sweet potatoes.
    Sorry that Barb was such a disappointment at the local Publix. I had very similar experiences when I was living in FL.
